🥣Barley soup

Barley is a 🌾 cereal grown in different areas, widely used in ancient recipes. Today we offer you the traditional 🥣 Barley soup, always good and tasty both in summer and winter! 🤗

Ingredients

  • 150g of barley
  • 80g of beans
  • 1 garlic clove
  • 2 laurel leaves
  • 3 medium-sized potatoes
  • 1lt of milk

Preparation

Soak the beans and barley for about 8 hours.
Peel the potatoes and put them in a pot with a liter and a half of water. Cook them with the herbs, the barley, the drained beans, and a couple of spoons of oil.
Cook it for a couple of hours, then mash the potatoes with a fork and add almost all the milk.
Continue cooking slowly for half an hour, and remember to stir frequently as it tends to stick to the bottom.
Turn off the heat and let it rest for 5 minutes.
Serve hot and enjoy your soup!

👉 Tips

To obtain an even more rustic flavor, put the ingredients in a terracotta pot and cook it on a wood stove. The soup will taste even better if you prepare it the day before!
Numerous variations also include the classic sautéed with carrots and celery and the addition of bacon.
